Egg Salad with Parsley Serves: 2
- 6 hard-boiled eggs, chilled
- ½ cup of mayonnaise
- 1 tsp. Dijon mustard
- 1 Tbsp. freshly chopped dill + more for serving
- Salt & pepper to taste
- Start by adding the hard-boiled eggs to a mixing bowl with the mayonnaise and mustard. Mash.
- Add in the freshly chopped dill, salt, and pepper and mix well.
- Chill for 1 hour before serving.
