Protein Coconut Pancakes Serves: 2
- ¼ cup coconut flour
- ¼ cup full-fat unsweetened coconut milk
- 3 eggs
- ½ tsp. baking soda
- 1 tsp. pure vanilla extract
- 2 Tbsp. melted coconut oil + more for cooking
- Add all of the ingredients to a large mixing bowl and whisk well to combine.
- Pour ¼ cup of the butter into the skillet at a time and cook for about 1 minute on each side.
- Serve with butter or coconut butter if desired.
