Protein Coconut Pancakes Serves: 2

Ingredients

  • ¼ cup coconut flour
  • ¼ cup full-fat unsweetened coconut milk
  • 3 eggs
  • ½ tsp. baking soda
  • 1 tsp. pure vanilla extract
  • 2 Tbsp. melted coconut oil + more for cooking

Directions

  1. Add all of the ingredients to a large mixing bowl and whisk well to combine.
  2. Pour ¼ cup of the butter into the skillet at a time and cook for about 1 minute on each side.
  3. Serve with butter or coconut butter if desired.
